Tripeiros
Did you know that the inhabitants of Porto are also called “tripeiros”? This nickname reflects its historical tradition of eating tripe and making Porto-style tripe an emblematic dish that makes the national gastronomy proud. You can find some variations in the ingredients but as a rule the recipe consists of parsley, salt, carrots, onions, ear, sausage, meat, veal hand, beef chorizo, streaky bacon, chicken, butter beans, bay leaf, pepper, lard, tripe and white rice. The current recipe is nothing more than the improvement of a dish that has many generations and stories.
Origin of the Dish
One of the legends tells that its emergence dates to the time when the great Portuguese adventure began: the discoveries. At this time, preparations were being made for the conquest of Ceuta, in North Africa, and here on the bank of the Douro River there was an important shipyard where ships were built. Although Prince Henry the Navigator was satisfied with the progress of the work, he knew that it was a mission that needed more commitment.
In this sense, the city came together and together they offered everything they had to the sailors, including all the meat they had. On land, only tripe remained as food, from which they created a rather humble dish. They were stewed and served on slices of bread.
