Francesinha - the most famous dish from Porto
Portuguese history, culture and tradition.
A noble sandwich with an intense flavor, wrapped in melted cheese and orange sauce. This is the description of the traditional presentation of the most famous dish of Porto’s gastronomy. Some say that its enormous success is related to the combination of typical ingredients from the North.
Ham, cheese, sausage, beef steak, bread and sauce are the most present elements, however there are numerous recipes. Its success is so great that it can easily be found everywhere in the country.
Origins
The authorship of this dish is attributed to a man from Porto who emigrated to Belgium. Its author, Daniel David da Silva, worked there in restoration. When he returned to Porto, he decided to open a food house, and in his menu was included some typical French dishes, such as the French croque monsieur sandwich. However, the demanding taste of the people of Porto called for a more generous version of this sandwich, which led him to the first francesinha version.
When first served, still without a defined name, one of his friends had the audacity to call it francesinha. He said that the exciting and new attitude that this dish provoked in his palate reminded him of the liberal posture and confident attitude of the young French women of that time. From then on, the name Francesinha stayed forever.
